Meal Prep: Vegetarian Mexican Skillet

I'm back on my meal prep grind! This had to be one of the best meals I've made in awhile. While I'm no vegetarian, sometimes it's nice to switch up it and get those veggies in.

Here's the recipe:

  • 2 medium sweet potatoes diced
  • One onion of your choice chopped ( I used a big ole yellow one)
  • Can of spicy black beans
  • Can of corn
  • Cauliflower rice (I bought the microwavable bag kind and it was delicious)
  • Whatever seasonings your little heart desires. I used taco seasoning, pepper, garlic, crushed red pepper, and some cayenne. I like it-a spicy!

I started browning the onions and about half way added the diced and seasoned sweet potatoes in and let that cook with the lid on. Once the sweet potatoes started softening up I added the black beans and once again let that simmer. Then when everything looked about done I added the corn, sprinkled in the crushed red pepper and mixed it all up and voila! A BOMB MEAL FOR THE WEEK.

Just put this mixture on a bed of caulli rice and take your taste buds to party town!

I added avocado and cotija cheese on top for extra flavor :)
